Nourishing Pumpkin Soup With Dukkah Topping

Ingredients
Roasted vegetables
- 1 medium pumpkin (halved, seeds removed)
- 1 white onion (quartered)
- 1 whole garlic bulb
- 5 carrots
- Fresh thyme sprigs
- 2–3 tbsp extra virgin olive oil
- Himalayan salt
- Black pepper
- 1 tsp turmeric
Soup base
- 2 cups vegetable stock
- 1 cup coconut milk
- 1 piece fresh ginger
- Roasted pumpkin flesh + vegetables
Dukkah topping
- 1/2 cup sunflower seeds
- 1/2 cup pumpkin seeds
- 1/4 cup flaxseed
Directions
Soup
- Roast pumpkin, onion, garlic, carrots and thyme at 180°C for 1 hour until soft and golden.
- Let cool slightly, then scoop out pumpkin flesh.
- Add roasted vegetables into your Vitamix with vegetable stock, coconut milk and ginger.
- Blend on soup setting until smooth, creamy and warmed through.
- Pour into bowls and serve with cunchy homemade Dukkah
Dukkah
- Dry roast sunflower, pumpkin seeds and flaxseed for 8–10 minutes.
- Add to the Vitamix Dry Grains Container.
- Blend for 10–20 seconds until crumbly, nutty and textured.
