Nourishing Pumpkin Soup With Dukkah Topping

Ingredients

Roasted vegetables

  • 1 medium pumpkin (halved, seeds removed)
  • 1 white onion (quartered)
  • 1 whole garlic bulb
  • 5 carrots
  • Fresh thyme sprigs
  • 2–3 tbsp extra virgin olive oil
  • Himalayan salt
  • Black pepper
  • 1 tsp turmeric

Soup base

  • 2 cups vegetable stock
  • 1 cup coconut milk
  • 1 piece fresh ginger
  • Roasted pumpkin flesh + vegetables
     

Dukkah topping

  • 1/2 cup sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/4 cup flaxseed

 

Directions

Soup

  1. Roast pumpkin, onion, garlic, carrots and thyme at 180°C for 1 hour until soft and golden.
  2. Let cool slightly, then scoop out pumpkin flesh.
  3. Add roasted vegetables into your Vitamix with vegetable stock, coconut milk and ginger.
  4. Blend on soup setting until smooth, creamy and warmed through.
  5. Pour into bowls and serve with cunchy homemade Dukkah

Dukkah

  1. Dry roast sunflower, pumpkin seeds and flaxseed for 8–10 minutes.
  2. Add to the Vitamix Dry Grains Container.
  3. Blend for 10–20 seconds until crumbly, nutty and textured.
